Kyoho are a large sweet Japanese grape, with mild acidity and high sugar content. These grapes make for a fragrant and bright vinegar. All of Shoubun-su's vinegars are made traditionally via static fermentation in a 300 year old vinegar brewery in Okawa, Fukuoka.
