This powder is made from Hon Mirin by Mikawa Mirin, a company established in 1911. For three generations their traditional technique has been protected and nourished.

Their mirin is not heated, so unlike other commercial mirin’s the rice koji mould remains alive. This is why this Mirin has a very profound flavour, completely different to sterilised Mirin.

This Mirin powder is sweet with a complex umami flavour, almost like a savoury sugar.
