This powder is made from Shio Shoyu (White Soy Sauce). It is clearer and sweeter than traditional soy sauce.

White Soy is made with a higher percentage of wheat and less fermented soy bean comparative to darker soy sauce.

This powder has a savoury umami flavour and slight sweetness, reminiscent of a sweet white miso.
