Aged over 20 years, Shoubun-su's Brown Rice Vinegar is savory, umami and sweet. It carries notes of burnt sugar but is lighter than a traditional 'black' vinegar. Shoubun-su's vinegars are made traditionally in a 300 year old vinegar brewery in Okawa, Fukuoka. The Shoubun-su brewery still ferments all of their vinegars traditionally via static fermentation in large earthenware pots.
