Koujiya's Fermented Rice Koji Powder is a fine powder made from rice Koji (rice inoculated with a fermentation culture, Aspergillus oryzae). Rich with natural enzymes, this ingredient is incredibly versatile enhancing the flavours of any dish. Additionally, Koji powder works great as a meat tenderizer; softening and enhancing umami flavours.

Koujiya have been operating their store on Shinji-dori street, Ise Jingu (Shrine), for more than 200 years, since 1816. Ise Shrine is the shinto shrine that the Japanese adore as "Soul of Japan" located in Ise city, Mie Prefecture. The Ise-Shima district has a long history of culinary culture which has fostered Kojiya's manufacturing of miso, Koji and soy products. How to make Amazake - Non-Alcoholic Sweet Fermented Rice Drink

Ingredients: Rice Koji powder 100g , Rice 80g, Water 450cc, Add salt to taste

  1. Cook rice into a porridge

  2. After it gets cooled down to 60 degrees, mix Rice Koji Powder in and add 450cc water.

  3. Leave it in yoghurt maker at 60 degrees for 10 hours (can be up to 12 hours). Stir once halfway through.

  4. Dilute with water until you achieve your desired texture.

Store for 3 days in refrigerator and up to 3 months in freezer.
