Yamada Seiyu’s signature white sesame paste, also known as Nerigoma, is rich, creamy, and deeply nutty with a smooth, velvety texture. Unlike tahini, which uses raw sesame seeds, hulled and gently roasted sesame seeds are used for a toasted aroma, mellow sweetness, and warm, buttery finish.
At Yamada Seiyu, the sesame paste is made slowly and carefully, using traditional stone mortars to grind the seeds without generating heat — preserving their full flavour and aroma. This labour-intensive method only yields only 1.2 kg (2.6 lb) per hour, but the result is a silky, intensely flavourful paste which the founder fondly referred to as ‘Goma Neri Neri’. The name reflects the heart of the craft: neri means “to grind” in Japanese, and Goma Neri Neri symbolises the patient, repetitive grinding process that produces an exceptionally fine texture. Inspired by Yamada and his wife — who originally created sesame oil and paste by hand — this product carries forward a legacy of trust, care, and dedication.
Perfect for dressings: simply mix with a bit of sugar and soy sauce to elevate vegetables like spinach, green beans, or broccoli. If the dressing is too thick, add a splash of dashi or water to adjust the consistency.
